start the xgraph file with:

TitleText: end-to-end packet delay variation over  period
YUnitText: packet transit time in s (Y) vs packet start time from 0 to 200s
XUnitText: s
0.0000 0.0000  
etc.

and customise to suit. I think this is detailed in the docs and man
pages that come with xgraph.
